Yummy White Bean Chili at Barb's!! Salad was great as well as the ice cream cinnamon sugar fried tortilla's!!!

  2. Here's the recipes (chili, salad & corn bread):
    White Chili
    Barbra - Feb 2010

    1 medium onion - chopped
    2 # ground turkey
    1 cup celery - chopped
    2 cup frozen corn
    1-4 oz can canned green chilies - chopped
    1 medium red bell pepper - chopped
    1 medium yellow bell pepper - chopped
    4 fresh jalapeno peppers – minced (leave seeds & veins in for more heat)
    ¼ cup all-purpose flour
    2 TAB butter (margarine)
    1 TAB ground cumin
    1 TAB dried oregano
    1 tea ground cinnamon
    to taste ground cayenne pepper or red pepper flakes, ground pepper & salt
    3-15 oz can white kidney beans (light red kidney beans)
    2 cup Monterey Jack cheese – shredded
    5 cup chicken broth

    Sauté in a large pot over medium heat (10 min) or until browned:
    onion
    ground turkey
    Add & sauté for 5 min.:
    chili peppers
    spices
    In a separate saucepan (make a roux):
    butter (margarine) - melted
    flour
    Whisk in & cook until thick:
    Chicken broth
    Stir mixture into turkey & vegetables.
    Purée:
    1 can beans - drained & rinsed
    Add to pot & simmer ½ hour:
    puréed beans
    cheese
    Stir in & simmer 15 minutes (until cooked & heated through):
    2 cans beans - drained & rinsed

    Garnish ideas:
    cheese
    sour cream
    thin sliced green onions
    cilantro

    May substitute favorite beans

    May add 2 cups cooked wild rice

    Mexican Frito Salad

    1-2 head romaine lettuce – cut in small pieces
    1 can black olives – drained & sliced
    4 green onions – chopped
    1 medium avocado – sliced
    1 medium green pepper – diced
    1 medium tomato – diced
    1 cup cheddar cheese – grated
    2 cup Fritos – lightly crushed
    to taste Catalina salad dressing

    Variations:
    ½ # ground beef – sautéed & drained
    1 can kidney beans – drained & rinsed

    Salad can be made ahead of time,
    except don’t add Fritos & dressing until just before serving.

    Corn Bread
    Marge - Feb 2010

    1 ¼ cup all-purpose flour
    ¾ cup enriched corn meal (Quaker or Aunt Jemima)
    ¼ cup sugar
    2 tea baking powder
    ½ tea salt (optional)
    1 cup skim milk
    ¼ cup vegetable oil
    2 egg whites or (1 egg) – beaten

    Heat oven – 4000
    Grease - 8” or 9” pan
    Combine: dry ingredients
    Stir & mix just until dry ingredients are moistened: milk, oil, egg
    Pour batter into greased pan
    Bake: 20 – 25 min. or until light golden brown & toothpick come out clean
    Serve warm – 9 servings
